Ingredients (yield 38 muffins):

  • 2 1/2 cup Whole Wheat Pastry Flour
  • dash of salt
  • 1/4 tsp ground Cinnamon
  • 1/8 tsp ground Nutmeg
  • 1/4 cup Sugar in the Raw
  • 1/4 cup Brown Sugar
  • 1/4 cup Maple Syrup
  • 1 tsp Baking Soda
  • 1 cup Plain Yogurt
  • 1 cup Milk
  • 1 large Egg, beaten
  • 1/8 cup Canola Oil
  • 1/2 cup Pumpkin, fresh or canned
  • 2 oz Applesauce, unsweetened
  • 1/8 cup Flax Seed, lightly ground
  • 1/2 cup Zucchini Squash, grated
