Apple Upside Down Cake

Ingredients

    Ingredients for the Apples
  • ½ cup maple syrup
  • 1/4 cup butter
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. ground cinnamon
  • Pinch Kosher salt
  • 1 apple (peeled, cored, and diced)
  • For the Cake
  • Cooking spray
  • 1 3/4 cup whole grain pancake mix
  • 2 tsp. ground cinnamon
  • ½ cup red quinoa
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 3/4 cup milk or yogurt

Instructions

  1. Grease an 8” round cake or pie pan with cooking spray.
  2. In a small saucepan over medium heat, stir together maple syrup, butter, vanilla, cinnamon and salt. Cook until melted, 2 minutes.
  3. Layer apples in bottom of greased pan and pour maple syrup sauce on top.
  4. In a large bowl, whisk together pancake mix, red quinoa, cinnamon and nutmeg.
  5. Add eggs, milk/yogurt, vanilla and stir. If thick, add about ¼ cup water to make more liquid.
  6. Pour batter over apples.
  7. Bake 25 minutes at 350°F. Lower heat when you put the pan in.
  8. Let cool in pan 10 minutes before serving from the pan.
