Stuffed Zucchini Boats

  • 4 medium zucchini (about 8 inches)
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 cup chopped fresh mushrooms
  • 1 cup chopped sweet red pepper
  • 1 cup chopped green pepper
  • 2 cups shredded cheddar cheese, divided
  • 4 tablespoons tomato paste
  • Salt and pepper to taste


  1. Trim the ends off the zucchini.
  2. Cut the zucchini in half lengthwise; scoop out pulp, leaving 1/2-inch shells.
  3. Finely chop the pulp.
  4. In a skillet, cook beef, zucchini pulp, onion, mushrooms and peppers over medium heat until meat is no longer pink. Drain and remove from the heat.
  5. Add 1/2 cup cheese, tomato paste, salt and pepper; mix well. Spoon into zucchini shells.
  6. Place the filled zucchini shells in a greased 13 x 9-inch baking dish. Sprinkle with remaining cheese.
  7. Bake uncovered at 350° until zucchini is tender, about 25 - 30 minutes.
