Lenka’s Traditional Slovak Kolache
Ingredients
- All purpose flour – 400g/ 14.1oz / ~ 3 cups and more for dusting (not gluten-free glour!)
- Milk - 200ml/ 7.2 oz / 1 cup
- White sugar – 40g / 1.4 oz / ~ 4 tablespoons
- Yeasts – fresh – 18-20g, or active dry – 8g (not instant yeasts)
- Egg yolks – 2 + 1
- Unsalted butter – 60g/ 2 oz / ~ 4 & 1/2 tablespoons (soft, at room temperature)
- Lemon zest from 1/2 lemon
- Pinch of salt
- Fruit Jam / Preserve of your preference: Plum Jam / Butter or Raspberry or Strawberry or Apricot or Mixed Berries, etc.
- Ricotta Filling: Ingredients needed -Ricotta Cheese (drained) or Tvaroh*, Sugar, Lemon Zest, Egg Yolk, Cinnamon and Dry Raisins
- Chocolate Filling: Ingredients needed – Chocolate Chips/ Chocolate Bar & Heavy Cream - Or readymade Chocolate Spread like Nutella
