Orange Monster Muffins

Ingredients (12 muffins):
- 2/3 cup Water
- 1/3 cup Quinoa, rinsed and drained
- 3/4 cup Whole Wheat Flour
- 3/4 cup White Flour
- 1 TBSP Baking Powder
- 3 tsp ground Cinnamon
- 1/4 TBSP Kosher Salt
- 2 large Eggs
- 1/2 cup Vegetable Oil
- 1/2 cup packed Brown Sugar
- 1/2 cup Plain Yogurt
- Orange Zest, half orange
- 1 1/2 cups Carrots, grated
Ingredients (48 muffins):
- 2 2/3 cups Water
- 1 1/3 cups Quinoa, rinsed and drained
- 3 cups Whole Wheat Flour
- 3 cups White Flour
- 1/4 cup Baking Powder
- 3 TBSP ground Cinnamon
- 1 TBSP Kosher Salt
- 8 large Eggs
- 2 cups Vegetable Oil
- 2 cups packed Brown Sugar
- 2 cups Plain Yogurt
- Orange Zest, 2 oranges
- 5 1/2 cups Carrots, grated
Directions:
- Boil water; add quinoa; cook 15-20 minutes until grains open
- Preheat oven to 400 degrees
- Coat muffin tins with spray oil or use paper liners
- Sift together flours, baking powder, cinnamon and salt
- Whisk eggs, oil, sugar, yogurt & orange zest until smooth
- Fold 4 & 5 together – don’t overmix
- Stir in carrots & quinoa until mixed.
- Fill muffin tins and bake 20 minutes until toothpick clean.
