Peanut Butter Cookies
Ingredients
- 1 cup peanut butter
- 1 ½ tsp baking soda
- 6 tbsp flour
- 2/3 cup sugar
- 4 tbsp applesauce
- 1 tsp pure vanilla extract
- 1/4 tsp salt
- Use sunflower butter, almond butter, or another allergy-friendly substitute for peanut butter.
- Use spelt, oat, sorghum, or rice flour instead of wheat or white flour.
- Use oil instead of applesauce if applesauce isn’t on-hand.

Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Combine dry ingredients in a mixing bowl.
- Add all remaining ingredients to the mixing bowl and stir to form a dough.
- Roll into cookie balls.
- Bake in a preheated oven for 8 minutes. The cookies will look quite underdone when you take them out. Let cool for at least 10 minutes before removing from the tray, as they firm up while cooling.
- If baking the cookies in two batches, put remaining dough in the fridge while waiting.
