Lightened Up Sweet Potato Casserole

Ingredients
- 4 pounds orange sweet potatoes
- 2 tablespoons oil (avocado, canola or grapeseed)
- ½ teaspoon salt
- 1 ½ teaspoons ground cinnamon
- ¾ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- 1 cup chopped pecans
- 2/3 cup rolled oats
- 3 tablespoons packed brown sugar
- ½ teaspoon salt
- 2 tablespoons oil (avocado, canola or grapeseed)
Topping
Instructions
- Preheat oven to 400 degrees. Peel sweet potatoes and chop into 1" cubes. (Or purchase precut sweet potatoes from Harmons.) Place into 9 x 13 inch baking pan.
- Add oil and toss to evenly coat potatoes. Season with salt, cinnamon, nutmeg and ginger and toss again to evenly coat.
- Roast for about 1 hour, until the potatoes are tender and easily pierced with a fork.
- In a medium bowl, mix together all topping ingredients until moist and evenly mixed. Sprinkle evenly over the potatoes and bake for an additional 15 minutes.
