Lightened Up Sweet Potato Casserole

Ingredients

  • 4 pounds orange sweet potatoes
  • 2 tablespoons oil (avocado, canola or grapeseed)
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ¾ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • Topping
  • 1 cup chopped pecans
  • 2/3 cup rolled oats
  • 3 tablespoons packed brown sugar
  • ½ teaspoon salt
  • 2 tablespoons oil (avocado, canola or grapeseed)

Instructions

  1. Preheat oven to 400 degrees. Peel sweet potatoes and chop into 1" cubes. (Or purchase precut sweet potatoes from Harmons.) Place into 9 x 13 inch baking pan.
  2. Add oil and toss to evenly coat potatoes. Season with salt, cinnamon, nutmeg and ginger and toss again to evenly coat.
  3. Roast for about 1 hour, until the potatoes are tender and easily pierced with a fork.
  4. In a medium bowl, mix together all topping ingredients until moist and evenly mixed. Sprinkle evenly over the potatoes and bake for an additional 15 minutes.
  5. Enjoy!
