Apple Upside Down Cake
Ingredients
- ½ cup maple syrup
- 1/4 cup butter
- 1 tsp. pure vanilla extract
- 1/2 tsp. ground cinnamon
- Pinch Kosher salt
- 1 apple (peeled, cored, and diced)
- Cooking spray
- 1 3/4 cup whole grain pancake mix
- 2 tsp. ground cinnamon
- ½ cup red quinoa
- 1 large egg
- 1 tsp. pure vanilla extract
- 3/4 cup milk or yogurt

- Grease an 8” round cake or pie pan with cooking spray.
- In a small saucepan over medium heat, stir together maple syrup, butter, vanilla, cinnamon and salt. Cook until melted, 2 minutes.
- Layer apples in bottom of greased pan and pour maple syrup sauce on top.
- In a large bowl, whisk together pancake mix, red quinoa, cinnamon and nutmeg.
- Add eggs, milk/yogurt, vanilla and stir. If thick, add about ¼ cup water to make more liquid.
- Pour batter over apples.
- Bake 25 minutes at 350°F. Lower heat when you put the pan in.
- Let cool in pan 10 minutes before serving from the pan.
