Stir Fried Rice

Stir Fried Rice

Ingredients

  • 1 small onion
  • 2 medium carrots, finely grated
  • 1 bell pepper 
  • 1/3 head of broccoli 
  • 1/4 bag of frozen peas
  • 1 TBSP minced ginger
  • 1/2 cup chopped pineapple
  • 2 cups cooked brown rice
  • 2 eggs
  • 1 TBSP soy sauce
  • 1 TBSP sesame oil
  • Sriracha to taste

Instructions

  1. Heat a large skillet over medium high heat.?Once heated after a few minutes, add oil to the pan and swirl it around.
  2. Add onions and carrots first until the onions are translucent, 5 minutes. (We add these first so the garlic and ginger doesn't burn.)
  3. Turn the heat just a little lower, then add the garlic and ginger. 
  4. Add the remaining veggies and cook until they are crispy, about 3 minutes.
