Stir Fried Rice
Ingredients
- 1 small onion
- 2 medium carrots, finely grated
- 1 bell pepper
- 1/3 head of broccoli
- 1/4 bag of frozen peas
- 1 TBSP minced ginger
- 1/2 cup chopped pineapple
- 2 cups cooked brown rice
- 2 eggs
- 1 TBSP soy sauce
- 1 TBSP sesame oil
- Sriracha to taste
Instructions
- Heat a large skillet over medium high heat.?Once heated after a few minutes, add oil to the pan and swirl it around.
- Add onions and carrots first until the onions are translucent, 5 minutes. (We add these first so the garlic and ginger doesn't burn.)
- Turn the heat just a little lower, then add the garlic and ginger.
- Add the remaining veggies and cook until they are crispy, about 3 minutes.
