Adventure Bites: Deer Valley Lasagna
EATS Taste Tests have taken on a new twist this year! We have been asked by the Child Nutrition Services (CNS) to administer THEIR new taste test program: Adventure Bites! Potential new menu items will be tested in this program and students from all Park City schools will determine which ones make it to the school cafeteria lunch lines.
Part of 15 TO CLEAN
As a result of a Task Force assembled in the Spring of 2016, CNS has established the 15 TO CLEAN program which aims to eliminate 15 unnecessary ingredients from school food in three years. As part of that program, new, freshly-prepared, healthy recipes will be created by a team of local talent including chefs from world-class restaurants, internationally renowned dietitians and nutritionists, child nutrition services staff and even the students themselves. These recipes will be used in the Adventure Bites taste test program being implemented by CNS.
The first Adventure Bites taste test
Adventure Bites kicked off in September with Deer Valley Lasagna! – a recipe provided by Jodie Rogers, Food and Beverage Director at Deer Valley Resorts and cooked by the Child Nutrition Services staff at each of the schools. This gluten-free recipe uses zucchini in place of noodles, which is seasonal and readily available.
Students tasted the lasagna and provided answers to two questions on school provided iPads: “Did you like the lasagna?” and “Would you eat it if served for school lunch?” Based on the results, students can enjoy this entrée on October 19th when it’ll be served on the lunch lines.

Parents are invited to eat lunch with their kids October 19th in celebration of National School Lunch Week (NSLW), Zucchini Lasagna will be served! Please let the front office of the school know so they can get an accurate lunch count! Learn more about NSLW from the School Nutrition Association.

EATS role in Adventure Bites
EATS role in Adventure Bites includes volunteers who serve the samples to the students and ask them to complete the questions on the iPads. EATS is also providing education on the ingredients in the new recipes.
For the Deer Valley Lasagna, EATS displayed whole zucchinis and talked with the students about the benefits of substituting healthy ingredients like zucchini into standard recipes.
Adventure Bites will be conducted twice monthly at all seven Park City schools: on the 2nd and 4th Wednesdays.
