Ingredients
- 2 15.5-ounce cans black beans
- 1 cup of organic vegetable broth
- 1 14.5-ounce can diced tomatoes
Instructions
- Combine all ingredients in a medium pot. Bring to a boil and simmer for 10 minutes.
- Remove from stove and blend using an immersion blender or a traditional blender.

Love this soup ! I’ve been experimenting with seasoned black beans and sometimes sub in ROTEL ( or any store brand of diced tomatoes with chilies ). Sometimes, I toss in some ham hock or bacon. And of course, I alway add garlic. A very versatile recipe that lends itself to some fun experimentation at very little cost. And very nutritious !
