Beef and Mushroom Stir Fry

Ingredients

    Ingredients for the sauce:
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon dry sherry
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons sugar
  • Ingredients for stir fry:
  • 3 tablespoons canola oil
  • 2 pounds flank steak, divided and trimmed
  • 4 cups 1-inch broccoli florets
  • 3 scallions, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced

Instructions

  1. Combine the ingredients for the sauce, set aside.
  2. Heat a wok or large pan over high heat. Add 2 tablespoons oil and swirl to coat.
  3. Add steak and fry until just cooked, 2 to 4 minutes. Transfer to a large plate.
  4. Swirl in another 2 tablespoon oil; add broccoli and scallions. Stir-fry for 2 minutes.
  5. Swirl in the remaining 2 tablespoon oil; add garlic and mushrooms. Stir-fry until vegetables are tender, 2 to 4 minutes more.
  6. Return the steak to the wok.
  7. Add reserved sauce and cook, gently stirring, until well coated and hot, 1 to 2 minutes.
  8. Serve alone or over rice. Enjoy!
