Stuffed Zucchini Boats
Ingredients
- 4 medium zucchini (about 8 inches)
- 1 pound ground beef
- 1 small onion, chopped
- 1 cup chopped fresh mushrooms
- 1 cup chopped sweet red pepper
- 1 cup chopped green pepper
- 2 cups shredded cheddar cheese, divided
- 4 tablespoons tomato paste
- Salt and pepper to taste
Instructions
- Trim the ends off the zucchini.
- Cut the zucchini in half lengthwise; scoop out pulp, leaving 1/2-inch shells.
- Finely chop the pulp.
- In a skillet, cook beef, zucchini pulp, onion, mushrooms and peppers over medium heat until meat is no longer pink. Drain and remove from the heat.
- Add 1/2 cup cheese, tomato paste, salt and pepper; mix well. Spoon into zucchini shells.
- Place the filled zucchini shells in a greased 13 x 9-inch baking dish. Sprinkle with remaining cheese.
- Bake uncovered at 350° until zucchini is tender, about 25 - 30 minutes.
