Cauliflower Crust Pizza Pies
Ingredients
- 1 head cauliflower, chopped
- 1 large egg
- 1/3 cup shredded mozzarella cheese
- 2 tablespoons freshly grated Parmesan
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Kosher salt and freshly ground black pepper, to taste

- Tomato Sauce
- 1 cup shredded Mozzarella cheese
- 1 container sliced mushrooms
- 1 can sliced or chopped artichoke hearts (drained)
- 2 cups spinach
- 1 jar jalapeños (if desired)
- Any other veggies or meats you desire!

Instructions
- Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
- To make the cauliflower crust, add cauliflower to the bowl of a food processor and pulse until finely ground, yielding about 2-3 cups.*
- Transfer to a microwave-safe bowl. Cover loosely and place into the microwave for 4-5 minutes, or until softened.
- Transfer cauliflower to a large bowl. Stir in egg, mozzarella, Parmesan, basil, oregano, garlic powder, and onion powder; season with salt and pepper, to taste.
- Using a spoon, spread cauliflower mixture into a circle for each pizza and place onto the lined baking sheet. Bake for 10-12 minutes, or until golden.
- While the crusts are baking, choose your sauce. Add the ingredients for your desired sauce to a food processor and blend.
